Description
A rich and aromatic Greek-style beef stew made quickly in the Instant Pot, featuring tender beef simmered with pearl onions, tomatoes, warm spices, and red wine-inspired depth.
Ingredients
- 2 lb beef chuck, cut into large chunks
- 2 tbsp olive oil
- 1 lb pearl onions, peeled
- 4 cloves garlic, minced
- 1 can (14 oz) crushed tomatoes
- 2 tbsp tomato paste
- 1 cup beef broth
- 1 tbsp red wine vinegar
- 1 tbsp sugar
- 1 tsp ground cinnamon
- 1/2 tsp ground allspice
- 2 bay leaves
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Set Instant Pot to Sauté mode and heat olive oil.
- Add beef chunks and brown on all sides. Remove and set aside.
- Add pearl onions to the pot and sauté for 2–3 minutes until lightly golden.
- Add garlic and cook for 30 seconds until fragrant.
- Stir in tomato paste and cook for 1 minute.
- Add crushed tomatoes, beef broth, red wine vinegar, sugar, cinnamon, allspice, bay leaves, oregano, salt, and pepper.
- Return beef to the pot and stir to combine.
- Secure lid, set valve to sealing, and cook on High Pressure for 35 minutes.
- Allow natural pressure release for 10 minutes, then carefully release remaining pressure.
- Remove bay leaves, taste, adjust seasoning, and serve hot.
Notes
- Serve with rice, mashed potatoes, or crusty bread.
- Using larger beef chunks helps keep the meat tender.
- Stew thickens naturally as it cools.
