Description

A rich and aromatic Greek-style beef stew made quickly in the Instant Pot, featuring tender beef simmered with pearl onions, tomatoes, warm spices, and red wine-inspired depth.


Ingredients

  • 2 lb beef chuck, cut into large chunks
  • 2 tbsp olive oil
  • 1 lb pearl onions, peeled
  • 4 cloves garlic, minced
  • 1 can (14 oz) crushed tomatoes
  • 2 tbsp tomato paste
  • 1 cup beef broth
  • 1 tbsp red wine vinegar
  • 1 tbsp sugar
  • 1 tsp ground cinnamon
  • 1/2 tsp ground allspice
  • 2 bay leaves
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper


Instructions

  1. Set Instant Pot to Sauté mode and heat olive oil.
  2. Add beef chunks and brown on all sides. Remove and set aside.
  3. Add pearl onions to the pot and sauté for 2–3 minutes until lightly golden.
  4. Add garlic and cook for 30 seconds until fragrant.
  5. Stir in tomato paste and cook for 1 minute.
  6. Add crushed tomatoes, beef broth, red wine vinegar, sugar, cinnamon, allspice, bay leaves, oregano, salt, and pepper.
  7. Return beef to the pot and stir to combine.
  8. Secure lid, set valve to sealing, and cook on High Pressure for 35 minutes.
  9. Allow natural pressure release for 10 minutes, then carefully release remaining pressure.
  10. Remove bay leaves, taste, adjust seasoning, and serve hot.

Notes

  • Serve with rice, mashed potatoes, or crusty bread.
  • Using larger beef chunks helps keep the meat tender.
  • Stew thickens naturally as it cools.
