Description
Carrabba’s Chicken Marsala is a restaurant-style Italian dish featuring juicy chicken breasts sautéed with mushrooms and simmered in a rich, buttery Marsala wine sauce. It’s elegant yet easy to make at home — perfect for family dinners or special occasions.
Ingredients
- 4 boneless, skinless chicken breasts
- 1/2 cup all-purpose flour (for dredging)
- 1/2 tsp salt
- 1/2 tsp black pepper
- 3 tbsp olive oil
- 3 tbsp unsalted butter, divided
- 8 oz cremini or button mushrooms, sliced
- 3 cloves garlic, minced
- 3/4 cup Marsala wine
- 1 cup chicken broth
- 1/2 cup heavy cream (optional for extra richness)
- 1 tbsp cornstarch mixed with 2 tbsp water (optional for thickening)
- 2 tbsp chopped fresh parsley (for garnish)
Instructions
- Place chicken breasts between two sheets of plastic wrap and pound to even thickness (about 1/2 inch).
- Mix flour, salt, and pepper in a shallow dish. Dredge each chicken breast lightly in the mixture, shaking off excess.
- Heat olive oil and 2 tbsp butter in a large skillet over medium-high heat. Cook chicken 4–5 minutes per side until golden brown and cooked through. Remove and set aside.
- In the same skillet, add mushrooms and sauté for 4–5 minutes until golden. Add garlic and cook for 1 minute.
- Pour in Marsala wine to deglaze the pan, scraping up browned bits. Simmer for 2–3 minutes to reduce slightly.
- Add chicken broth and simmer for another 5 minutes. Stir in heavy cream if using, and the remaining 1 tbsp butter.
- If you prefer a thicker sauce, stir in the cornstarch slurry and cook until the sauce coats the back of a spoon.
- Return chicken to the skillet, spoon sauce and mushrooms over the top, and simmer for 2 minutes to reheat.
- Garnish with chopped parsley and serve with mashed potatoes, pasta, or sautéed vegetables.
Notes
- Use dry Marsala wine, not sweet, for authentic flavor.
- If Marsala is unavailable, substitute with dry sherry or white wine with a splash of brandy.
- Make it lighter by skipping the cream — it will still be rich and flavorful.
