Description
Italian Torrone is a traditional nougat candy made with honey, sugar, and egg whites, studded with roasted nuts and often flavored with citrus or vanilla. It’s a classic Italian sweet served especially during Christmas.
Ingredients
- 2 cups roasted almonds
- 1 cup roasted hazelnuts
- 1 cup honey
- 1 1/4 cups granulated sugar
- 2 large egg whites
- 1 teaspoon vanilla extract
- 1 teaspoon grated lemon zest (optional)
- Edible rice paper (optional, for lining)
Instructions
- Line a rectangular baking pan with edible rice paper or parchment paper.
- In a heavy saucepan, heat honey over low heat for about 30 minutes, stirring occasionally.
- In a separate pan, melt sugar until it becomes a light golden caramel, then slowly add it to the warm honey, stirring constantly.
- In a large bowl, beat egg whites until stiff peaks form.
- Gradually fold the hot honey-sugar mixture into the beaten egg whites, mixing continuously until thick and glossy.
- Stir in the roasted nuts, vanilla extract, and lemon zest (if using).
- Quickly pour the mixture into the prepared pan, pressing it evenly with a greased spatula.
- Cover the top with another sheet of rice paper or parchment paper and let it cool completely at room temperature.
- Once firm, cut into bars or squares using a sharp knife.
Notes
- Torrone can be soft or hard depending on cooking time—longer cooking yields a firmer texture.
- Store in an airtight container at room temperature for up to 2 weeks.
- You can substitute nuts with pistachios or a mix of your favorites.
