Ingredients
- 2 tablespoons olive oil
- 2 boneless, skinless chicken breasts (about 450 g), sliced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 250 g pasta (penne or fettuccine)
- 1 teaspoon dried Italian seasoning
- 1/4 teaspoon chili flakes (optional)
- 2 tablespoons fresh basil or parsley, chopped
Instructions
- Cook the pasta in salted boiling water according to package instructions. Drain and set aside.
- Season the chicken slices with salt, pepper, and paprika.
- Heat olive oil in a large skillet over medium heat and cook the chicken until golden and cooked through. Remove and set aside.
- In the same skillet, add garlic and sauté for about 30 seconds until fragrant.
- Add sun-dried tomatoes, chicken broth, and heavy cream. Stir and bring to a gentle simmer.
- Mix in Parmesan cheese, Italian seasoning, and chili flakes. Stir until the sauce thickens slightly.
- Return the cooked chicken to the skillet and simmer for 3–4 minutes.
- Add the cooked pasta and toss until well coated with the sauce.
- Garnish with fresh basil or parsley and serve warm.
Notes
- You can substitute half-and-half for a lighter sauce.
- Add spinach or mushrooms for extra vegetables.
- Adjust chili flakes to control the spice level.
- Serve with garlic bread or a green salad.
