Description

A fun and hearty twist on classic lasagna, featuring tender lasagna noodles rolled up with juicy meatballs, ricotta, marinara sauce, and melted cheese.


Ingredients

  • 12 lasagna noodles
  • 1 lb (450 g) cooked meatballs, sliced
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese (divided)
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 2 cups marinara sauce
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp black pepper
  • 2 tbsp chopped fresh parsley (optional)


Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  2. Cook lasagna noodles according to package instructions until al dente. Drain and lay flat.
  3. In a bowl, mix ricotta cheese, egg, Parmesan cheese, Italian seasoning, salt, pepper, and half of the mozzarella.
  4. Spread a thin layer of marinara sauce on the bottom of the baking dish.
  5. Spread ricotta mixture evenly over each lasagna noodle.
  6. Place sliced meatballs along each noodle.
  7. Carefully roll up each noodle and place seam-side down in the baking dish.
  8. Spoon remaining marinara sauce over the roll-ups.
  9. Top with remaining mozzarella cheese.
  10. Cover with foil and bake for 25 minutes.
  11. Uncover and bake for an additional 10–15 minutes until cheese is melted and bubbly.
  12. Garnish with parsley before serving.

Notes

  • You can use homemade or store-bought meatballs.
  • Let roll-ups rest for 5 minutes before serving.
  • These freeze well for make-ahead meals.
