A flavorful twist on the classic grilled cheese, this Mediterranean Spinach Grilled Cheese combines creamy feta, melty mozzarella, spinach, and sun-dried tomatoes for a satisfying, golden-toasted sandwich bursting with Mediterranean flair.
Ingredients
- 4 slices sourdough or whole-grain bread
- 2 tbsp olive oil or butter
- 1 cup fresh spinach, chopped
- 1/4 cup sun-dried tomatoes, chopped
- 1/4 cup crumbled feta cheese
- 1/2 cup shredded mozzarella cheese
- 1 tbsp pesto (optional)
- 1/4 tsp dried oregano
- Salt and black pepper to taste
Instructions
- Heat 1 tsp olive oil in a small skillet over medium heat. Add spinach and cook until wilted, about 2 minutes. Season lightly with salt and pepper.
- Lay out the bread slices and spread a thin layer of pesto on each (if using).
- On two slices, evenly layer spinach, sun-dried tomatoes, feta, and mozzarella. Sprinkle with oregano.
- Top with the remaining bread slices to make sandwiches.
- Brush the outer sides of the bread with olive oil or butter.
- Heat a skillet or griddle over medium heat. Place the sandwiches and cook 3–4 minutes per side, pressing gently, until golden brown and cheese is melted.
- Slice in half and serve warm.
