Description
Melt-In-Your-Mouth Beef Stroganoff is a rich, creamy, deeply savory dish made with tender beef, buttery mushrooms, and a luxurious sour cream sauce served over noodles or mashed potatoes.
Ingredients
- 1 1/2 lbs beef sirloin or tenderloin, thinly sliced
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 8 oz mushrooms, sliced
- 1 tablespoon flour
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- 1 cup sour cream
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- Fresh parsley for garnish
- Cooked egg noodles, rice, or mashed potatoes for serving
Instructions
- Season beef with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Sear beef in batches until browned but not fully cooked. Remove and set aside.
- In the same skillet, melt butter and add onions. Cook until softened, about 3–4 minutes.
- Add garlic and mushrooms, cooking until mushrooms release their juices and brown.
- Sprinkle flour over the mixture and stir for 1 minute.
- Pour in beef broth, stirring to remove any browned bits from the pan.
- Add Worcestershire sauce and Dijon mustard. Stir and bring to a light simmer.
- Return beef to the pan and cook on low heat for 5–8 minutes, until tender.
- Stir in sour cream until fully blended and creamy. Do not boil.
- Serve over egg noodles, rice, or mashed potatoes and garnish with fresh parsley.
Notes
- Slicing beef thinly ensures tenderness.
- Do not boil after adding sour cream to prevent curdling.
- Substitute Greek yogurt for a lighter version.
- Add paprika for extra depth of flavor.
