Description

Melt-In-Your-Mouth Beef Stroganoff is a rich, creamy, deeply savory dish made with tender beef, buttery mushrooms, and a luxurious sour cream sauce served over noodles or mashed potatoes.

Ingredients

  • 1 1/2 lbs beef sirloin or tenderloin, thinly sliced
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1 tablespoon flour
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 cup sour cream
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh parsley for garnish
  • Cooked egg noodles, rice, or mashed potatoes for serving

Instructions

  1. Season beef with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear beef in batches until browned but not fully cooked. Remove and set aside.
  3. In the same skillet, melt butter and add onions. Cook until softened, about 3–4 minutes.
  4. Add garlic and mushrooms, cooking until mushrooms release their juices and brown.
  5. Sprinkle flour over the mixture and stir for 1 minute.
  6. Pour in beef broth, stirring to remove any browned bits from the pan.
  7. Add Worcestershire sauce and Dijon mustard. Stir and bring to a light simmer.
  8. Return beef to the pan and cook on low heat for 5–8 minutes, until tender.
  9. Stir in sour cream until fully blended and creamy. Do not boil.
  10. Serve over egg noodles, rice, or mashed potatoes and garnish with fresh parsley.

Notes

  • Slicing beef thinly ensures tenderness.
  • Do not boil after adding sour cream to prevent curdling.
  • Substitute Greek yogurt for a lighter version.
  • Add paprika for extra depth of flavor.
