Description

Merry Berry Christmas Tart is a festive, vibrant dessert featuring a buttery crust filled with creamy vanilla custard and topped with a beautifully arranged mix of fresh holiday berries and a glossy jam glaze.

Ingredients

  • 1 pre-made tart shell (9-inch) or homemade shortcrust
  • 1 1/2 cups fresh strawberries, halved
  • 1 cup fresh raspberries
  • 1 cup fresh blueberries
  • 1 cup fresh blackberries
  • 1/3 cup raspberry or strawberry jam
  • 1 tablespoon water
  • Custard Filling:
  • 1 1/2 cups whole milk
  • 1/3 cup sugar
  • 3 tablespoons cornstarch
  • 2 egg yolks
  • 1 tablespoon butter
  • 1 teaspoon vanilla extract

Instructions

  1. Bake or prepare tart shell according to package or recipe instructions, then allow it to cool completely.
  2. In a saucepan, whisk together milk, sugar, cornstarch, and egg yolks.
  3. Cook over medium heat, whisking constantly, until thickened, about 5–7 minutes.
  4. Remove from heat and stir in butter and vanilla extract. Let cool slightly.
  5. Pour the custard into the cooled tart shell and spread evenly.
  6. Arrange the berries decoratively over the custard, covering the surface completely.
  7. In a small bowl, warm the jam and water together until smooth, then brush gently over the berries to create a glossy finish.
  8. Refrigerate for at least 1 hour before serving.

Notes

  • Use any combination of berries you prefer, depending on availability.
  • For extra shine, strain the jam before brushing.
  • The tart is best served fresh but can be chilled up to 24 hours.
  • Add a sprinkle of powdered sugar before serving for a snowy touch.
