Description

A hearty and flavorful Mexican casserole layered with seasoned beef, beans, corn, cheese, and tortillas, baked to perfection for a comforting, crowd-pleasing meal.


Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup canned black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup salsa
  • 2 cups shredded cheddar cheese
  • 6 small flour or corn tortillas
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper
  • 1/2 tsp cumin
  • 1/2 tsp chili powder
  • Salt and pepper to taste
  • Fresh cilantro and sour cream for garnish (optional)


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
  3. Add onion, bell pepper, taco seasoning, cumin, and chili powder to the beef and cook for 3-4 minutes.
  4. Stir in beans, corn, diced tomatoes, and salsa. Simmer for 5 minutes.
  5. In a greased 9×13-inch baking dish, layer tortillas, beef mixture, and cheese. Repeat until all ingredients are used, finishing with a cheese layer on top.
  6. Bake for 25–30 minutes, or until cheese is melted and bubbly.
  7. Let cool for 5 minutes, then garnish with cilantro and sour cream before serving.

Notes

  • You can substitute ground turkey or chicken for beef.
  • For a spicier version, use hot salsa or add jalapeños.
  • Leftovers keep well in the fridge for up to 3 days.
