Description
Mexican White Trash Casserole is a hearty, family-friendly baked dish made with seasoned ground beef, creamy sauce, sweet corn, Rotel tomatoes, crushed tortilla chips, and melted cheese for a comforting Tex-Mex inspired meal.
Ingredients
- 1 lb ground beef
- 1 small onion, diced
- 1 packet (1 oz) taco seasoning
- 1 can (10 oz) Rotel diced tomatoes with green chilies, drained
- 1 can (15 oz) whole kernel corn, drained
- 1 can (10.5 oz) cream of chicken soup
- 1 cup sour cream
- 2 cups shredded Mexican blend cheese, divided
- 3 cups crushed tortilla chips
- Salt and black pepper to taste
- Chopped cilantro or sliced green onions for garnish (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- In a large skillet over medium heat, cook ground beef and diced onion until beef is browned and fully cooked. Drain excess fat.
- Stir in taco seasoning, Rotel tomatoes, and corn. Cook for 2–3 minutes until combined and heated through.
- In a large bowl, mix cream of chicken soup and sour cream until smooth.
- Add the beef mixture to the soup mixture and stir in 1 cup of shredded cheese.
- Spread half of the crushed tortilla chips evenly in the prepared baking dish.
- Pour the beef mixture over the chips and spread evenly.
- Top with remaining crushed tortilla chips and sprinkle with the remaining 1 cup of cheese.
- Bake uncovered for 25–30 minutes, or until hot and bubbly and cheese is melted.
- Let rest for 5 minutes before serving. Garnish with cilantro or green onions if desired.
Notes
- Substitute ground turkey or chicken for a lighter option.
- Add black beans for extra protein and texture.
- For extra heat, include diced jalapeños or use hot taco seasoning.
- This casserole can be assembled ahead of time and refrigerated until ready to bake.
