Description

Mexican White Trash Casserole is a hearty, family-friendly baked dish made with seasoned ground beef, creamy sauce, sweet corn, Rotel tomatoes, crushed tortilla chips, and melted cheese for a comforting Tex-Mex inspired meal.


Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 1 packet (1 oz) taco seasoning
  • 1 can (10 oz) Rotel diced tomatoes with green chilies, drained
  • 1 can (15 oz) whole kernel corn, drained
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 2 cups shredded Mexican blend cheese, divided
  • 3 cups crushed tortilla chips
  • Salt and black pepper to taste
  • Chopped cilantro or sliced green onions for garnish (optional)


Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a large skillet over medium heat, cook ground beef and diced onion until beef is browned and fully cooked. Drain excess fat.
  3. Stir in taco seasoning, Rotel tomatoes, and corn. Cook for 2–3 minutes until combined and heated through.
  4. In a large bowl, mix cream of chicken soup and sour cream until smooth.
  5. Add the beef mixture to the soup mixture and stir in 1 cup of shredded cheese.
  6. Spread half of the crushed tortilla chips evenly in the prepared baking dish.
  7. Pour the beef mixture over the chips and spread evenly.
  8. Top with remaining crushed tortilla chips and sprinkle with the remaining 1 cup of cheese.
  9. Bake uncovered for 25–30 minutes, or until hot and bubbly and cheese is melted.
  10. Let rest for 5 minutes before serving. Garnish with cilantro or green onions if desired.

  • Add black beans for extra protein and texture.
  • For extra heat, include diced jalapeños or use hot taco seasoning.
