Description

Soft, chewy Oatmeal Raisin Cookie Bars packed with warm cinnamon flavor, plump raisins, and hearty oats — a quick and easy dessert or snack for any occasion.


Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 3 cups old-fashioned rolled oats
  • 1 cup raisins
  • 1/2 cup chopped walnuts (optional)


Instructions

  1. Preheat oven to 350°F (177°C). Line a 9×13-inch baking pan with parchment paper or lightly grease it.
  2. In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add the eggs and vanilla extract, mixing until combined.
  4. In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Stir in the oats, raisins, and walnuts (if using).
  7. Spread the dough evenly into the prepared pan and smooth the top with a spatula.
  8. Bake for 25–30 minutes, or until golden brown around the edges and set in the center.
  9. Allow to cool completely in the pan before cutting into bars.

Notes

  • Soak raisins in warm water for 10 minutes before using for extra plumpness.
  • For chewier bars, slightly underbake them.
  • Store in an airtight container for up to 5 days at room temperature or freeze for up to 2 months.
