Soft, chewy Oatmeal Raisin Cookie Bars packed with warm cinnamon flavor, plump raisins, and hearty oats — a quick and easy dessert or snack for any occasion.
Ingredients
- 1 cup (2 sticks) unsalted butter, softened
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 teaspoons ground cinnamon
- 3 cups old-fashioned rolled oats
- 1 cup raisins
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat oven to 350°F (177°C). Line a 9×13-inch baking pan with parchment paper or lightly grease it.
- In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
- Add the eggs and vanilla extract, mixing until combined.
- In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Stir in the oats, raisins, and walnuts (if using).
- Spread the dough evenly into the prepared pan and smooth the top with a spatula.
- Bake for 25–30 minutes, or until golden brown around the edges and set in the center.
- Allow to cool completely in the pan before cutting into bars.
Notes
- Soak raisins in warm water for 10 minutes before using for extra plumpness.
- For chewier bars, slightly underbake them.
- Store in an airtight container for up to 5 days at room temperature or freeze for up to 2 months.
