Ingredients

  • 4 boneless, skinless chicken breasts
  • 500g baby potatoes, halved
  • 4 tablespoons butter, melted
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Preheat oven to 200°C (400°F).
  2. In a large bowl, toss the halved potatoes with olive oil, salt, pepper, and half of the herbs.
  3. Spread the potatoes evenly on a baking sheet or large oven-safe pan.
  4. Bake for 20 minutes until they begin to soften.
  5. Meanwhile, mix melted butter with minced garlic, remaining herbs, paprika, salt, and pepper.
  6. Remove the pan from the oven and push potatoes to the sides.
  7. Place the chicken breasts in the center and brush generously with the garlic butter mixture.
  8. Return to the oven and bake for 20–25 minutes, or until the chicken is cooked through and potatoes are golden.
  9. Spoon remaining garlic butter from the pan over the chicken before serving.
  10. Garnish with fresh parsley and serve warm.
