A simple and flavorful one-pan garlic butter chicken and potatoes recipe that’s perfect for an easy weeknight dinner, combining juicy chicken with crispy, golden potatoes.
Ingredients
- 4 boneless, skinless chicken breasts
- 500g baby potatoes, halved
- 4 tablespoons butter, melted
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 200°C (400°F).
- In a large bowl, toss the halved potatoes with olive oil, salt, pepper, and half of the herbs.
- Spread the potatoes evenly on a baking sheet or large oven-safe pan.
- Bake for 20 minutes until they begin to soften.
- Meanwhile, mix melted butter with minced garlic, remaining herbs, paprika, salt, and pepper.
- Remove the pan from the oven and push potatoes to the sides.
- Place the chicken breasts in the center and brush generously with the garlic butter mixture.
- Return to the oven and bake for 20–25 minutes, or until the chicken is cooked through and potatoes are golden.
- Spoon remaining garlic butter from the pan over the chicken before serving.
- Garnish with fresh parsley and serve warm.

- You can use bone-in chicken for more flavor, but adjust cooking time.
- Cut potatoes evenly to ensure uniform cooking.
- Add vegetables like green beans or carrots for variation.
- For extra crispiness, broil for 2–3 minutes at the end.
