Description

Oreo Cheesecake Cookie Bars are rich, creamy dessert bars with a buttery Oreo cookie crust, a smooth cheesecake layer, and chunks of Oreo cookies baked right in. Perfect for parties, potlucks, or any time you crave cookies and cheesecake in one bite.


Ingredients

  • 24 Oreo cookies (for crust)
  • 5 tbsp unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1/4 cup sour cream
  • 2 large eggs
  • 1 tsp vanilla extract
  • 10 Oreo cookies, roughly chopped (for filling)


Instructions

  1. Preheat oven to 325°F (165°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. Crush 24 Oreos into fine crumbs. Mix with melted butter until combined. Press firmly into the bottom of the prepared pan to form the crust.
  3. In a large bowl, beat cream cheese and sugar together until smooth.
  4. Add sour cream, eggs, and vanilla extract, mixing until just combined. Do not overmix.
  5. Fold in chopped Oreos gently.
  6. Pour the cheesecake batter over the crust and spread evenly.
  7. Bake for 35–40 minutes, or until the edges are set and the center is slightly jiggly.
  8. Cool completely at room temperature, then refrigerate for at least 3 hours before slicing into bars.

Notes

  • For extra crunch, sprinkle additional Oreo chunks on top before baking.
  • Bars cut best when chilled overnight.
  • Store leftovers in an airtight container in the fridge for up to 5 days.
