Oreo Cheesecake Cookie Bars are rich, creamy dessert bars with a buttery Oreo cookie crust, a smooth cheesecake layer, and chunks of Oreo cookies baked right in. Perfect for parties, potlucks, or any time you crave cookies and cheesecake in one bite.
Ingredients
- 24 Oreo cookies (for crust)
- 5 tbsp unsalted butter, melted
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1/4 cup sour cream
- 2 large eggs
- 1 tsp vanilla extract
- 10 Oreo cookies, roughly chopped (for filling)
Instructions
- Preheat oven to 325°F (165°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang for easy removal.
- Crush 24 Oreos into fine crumbs. Mix with melted butter until combined. Press firmly into the bottom of the prepared pan to form the crust.
- In a large bowl, beat cream cheese and sugar together until smooth.
- Add sour cream, eggs, and vanilla extract, mixing until just combined. Do not overmix.
- Fold in chopped Oreos gently.
- Pour the cheesecake batter over the crust and spread evenly.
- Bake for 35–40 minutes, or until the edges are set and the center is slightly jiggly.
- Cool completely at room temperature, then refrigerate for at least 3 hours before slicing into bars.
Notes
- For extra crunch, sprinkle additional Oreo chunks on top before baking.
- Bars cut best when chilled overnight.
- Store leftovers in an airtight container in the fridge for up to 5 days.
