Description

Crispy oven-fried potato skins stuffed with a savory mixture of potato, cheese, bacon, and seasonings for a hearty appetizer or side dish.


Ingredients

  • 4 large russet potatoes
  • 2 tablespoons olive oil
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked crumbled bacon
  • 1/3 cup sour cream
  • 2 tablespoons butter, melted
  • 2 green onions, sliced
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Preheat the oven to 425°F (220°C). Scrub the potatoes and pierce them with a fork.
  2. Rub the potatoes with olive oil and bake for 45–60 minutes, or until tender.
  3. Let the potatoes cool slightly, then cut them in half lengthwise and scoop out the centers, leaving a 1/4-inch shell.
  4. In a bowl, mash the scooped-out potato with sour cream, melted butter, garlic powder, salt, and pepper.
  5. Stir in the cheddar cheese, bacon, and green onions.
  6. Fill each potato shell with the stuffing mixture.
  7. Return to the oven and bake for 15–20 minutes, until the tops are lightly browned and crisp.
  8. Serve warm.

  • Use smoked paprika or chili powder for added flavor.
  • For a lighter version, substitute Greek yogurt for sour cream.
