Ingredients

  • 3 lbs russet or Yukon gold potatoes, peeled and cut into chunks
  • 1 teaspoon salt (for boiling)
  • 1/2 cup unsalted butter
  • 1 cup whole milk or heavy cream, warmed
  • 1 teaspoon salt (for seasoning)
  • 1/2 teaspoon black pepper
  • Fresh chives for garnish (optional)


Instructions

  1. Add potatoes to a large pot and cover with cold water. Add 1 teaspoon of salt and bring to a boil.
  2. Reduce heat and simmer 15–20 minutes, or until potatoes are fork-tender.
  3. Drain well and return potatoes to the warm pot to evaporate excess moisture.
  4. Mash potatoes using a masher, ricer, or mixer.
  5. Warm butter and milk together, then slowly add to potatoes, mixing until creamy and fluffy.
  6. Season with remaining salt and pepper to taste.
  7. Garnish with fresh chives, if desired.
