A festive blend of cream cheese, pineapple, cranberries, and nuts shaped into a holiday cheese log perfect for entertaining.
Ingredients
- 16 oz cream cheese, softened
- 1 cup crushed pineapple, drained
- 1 cup dried cranberries, chopped
- 1/2 cup pecans or walnuts, chopped
- 1/2 cup green onions, finely sliced
- 1/2 tsp garlic powder
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/2 cup additional chopped nuts for coating
- 1/4 cup additional dried cranberries for coating
Instructions
- In a large bowl, mix softened cream cheese until smooth.
- Stir in crushed pineapple, chopped cranberries, nuts, green onions, garlic powder, salt, and pepper.
- Combine well, then shape the mixture into a log using plastic wrap.
- Refrigerate for at least 2 hours to firm.
- Mix the additional nuts and cranberries on a plate.
- Unwrap the log and roll it in the coating mixture until fully covered.
- Chill until ready to serve and slice as needed.
Notes
- Ensure pineapple is well-drained to prevent the mixture from becoming too wet.
- Can be made a day ahead for better flavor.
