Ingredients

  • 16 oz cream cheese, softened
  • 1 cup crushed pineapple, drained
  • 1 cup dried cranberries, chopped
  • 1/2 cup pecans or walnuts, chopped
  • 1/2 cup green onions, finely sliced
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup additional chopped nuts for coating
  • 1/4 cup additional dried cranberries for coating


Instructions

  1. In a large bowl, mix softened cream cheese until smooth.
  2. Stir in crushed pineapple, chopped cranberries, nuts, green onions, garlic powder, salt, and pepper.
  3. Combine well, then shape the mixture into a log using plastic wrap.
  4. Refrigerate for at least 2 hours to firm.
  5. Mix the additional nuts and cranberries on a plate.
  6. Unwrap the log and roll it in the coating mixture until fully covered.
  7. Chill until ready to serve and slice as needed.
