Description
Chewy chocolate chip cookie cups filled with mini Reese’s peanut butter cups, making the ultimate bite-sized treat for chocolate and peanut butter lovers.
Ingredients
- 1 1/4 cups all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar, packed
- 1/4 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 cup semi-sweet chocolate chips
- 24 mini Reese’s peanut butter cups, unwrapped
Instructions
- Preheat oven to 350°F (175°C) and lightly grease a mini muffin tin.
- In a bowl, whisk together flour, baking soda, and salt. Set aside.
- In a large mixing bowl, cream butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in egg and vanilla extract until combined.
- Gradually add dry ingredients to wet mixture, mixing just until combined.
- Stir in chocolate chips.
- Scoop about 1 tbsp of dough into each mini muffin cup.
- Bake for 8–10 minutes, until edges are golden brown.
- Immediately press a mini Reese’s peanut butter cup into the center of each cookie.
- Cool in the pan for 10 minutes before transferring to a wire rack.
Notes
- Best enjoyed slightly warm for a gooey center.
- Store in an airtight container for up to 5 days.
- Can be frozen for up to 2 months.
