Description

Reindeer Ranch Cheesy Taco Potatoes are a comforting, Tex-Mex–inspired dish featuring crispy roasted potatoes smothered in melty cheese, seasoned taco beef, and festive toppings.


Ingredients

  • 4 cups potatoes, diced into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 lb ground beef
  • 1 packet taco seasoning (or 2 tablespoons homemade)
  • 1/2 cup water
  • 1 1/2 cups shredded cheddar or Mexican blend cheese
  • 1/2 cup sour cream
  • 1/2 cup salsa
  • 1/4 cup sliced green onions
  • 1/4 cup chopped cilantro (optional)
  • Jalapeño slices (optional)


Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment or foil.
  2. Toss diced potatoes with olive oil, salt, pepper, and garlic powder. Spread evenly on the baking sheet.
  3. Roast for 25–30 minutes, flipping halfway, until golden and crispy.
  4. Meanwhile, cook ground beef in a skillet over medium heat until browned. Drain excess fat.
  5. Add taco seasoning and water to the beef. Simmer 3–5 minutes until thickened.
  6. Remove potatoes from the oven and transfer to an oven-safe dish or skillet.
  7. Top potatoes with taco beef and sprinkle cheese over the top.
  8. Return to oven for 5–7 minutes, or until cheese is fully melted and bubbly.
  9. Finish with sour cream, salsa, green onions, cilantro, and jalapeños if desired.
