Description
Reindeer Ranch Cheesy Taco Potatoes are a comforting, Tex-Mex–inspired dish featuring crispy roasted potatoes smothered in melty cheese, seasoned taco beef, and festive toppings.
Ingredients
- 4 cups potatoes, diced into 1-inch cubes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 lb ground beef
- 1 packet taco seasoning (or 2 tablespoons homemade)
- 1/2 cup water
- 1 1/2 cups shredded cheddar or Mexican blend cheese
- 1/2 cup sour cream
- 1/2 cup salsa
- 1/4 cup sliced green onions
- 1/4 cup chopped cilantro (optional)
- Jalapeño slices (optional)
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment or foil.
- Toss diced potatoes with olive oil, salt, pepper, and garlic powder. Spread evenly on the baking sheet.
- Roast for 25–30 minutes, flipping halfway, until golden and crispy.
- Meanwhile, cook ground beef in a skillet over medium heat until browned. Drain excess fat.
- Add taco seasoning and water to the beef. Simmer 3–5 minutes until thickened.
- Remove potatoes from the oven and transfer to an oven-safe dish or skillet.
- Top potatoes with taco beef and sprinkle cheese over the top.
- Return to oven for 5–7 minutes, or until cheese is fully melted and bubbly.
- Finish with sour cream, salsa, green onions, cilantro, and jalapeños if desired.
Notes
- Swap ground beef for turkey or chicken for a lighter version.
- Add black beans or corn for extra Tex-Mex flavor.
- Use pepper jack cheese for a spicy kick.
