Ingredients

  • 8 chicken drumsticks
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 2 tablespoons butter (for gravy)
  • 2 tablespoons all-purpose flour
  • 2 cups chicken broth
  • 1/2 teaspoon onion powder
  • 4 large russet potatoes, peeled and cut into chunks
  • 1/4 cup butter (for mash)
  • 1/2 cup milk (warm)
  • Salt and pepper to taste (for mash)
  • Fresh parsley for garnish (optional)


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Pat chicken drumsticks dry with paper towels. Rub with olive oil, salt, pepper, paprika, garlic powder, and thyme.
  3. Arrange drumsticks on a baking sheet lined with parchment paper or foil.
  4. Roast for 35–40 minutes, flipping halfway through, until golden brown and internal temperature reaches 165°F (74°C).
  5. While chicken roasts, prepare mashed potatoes: Boil potato chunks in salted water for 15–20 minutes until tender. Drain and mash with butter, warm milk, and salt and pepper to taste.
  6. For gravy: In a saucepan, melt 2 tablespoons butter over medium heat. Whisk in flour and cook for 1–2 minutes until lightly browned.
  7. Slowly whisk in chicken broth and onion powder, stirring constantly until thickened (about 5 minutes). Season with salt and pepper to taste.
  8. Remove chicken from oven and let rest 5 minutes. Serve drumsticks with mashed potatoes and pour gravy over the top.
  9. Garnish with chopped parsley if desired and enjoy.
