Ingredients
- 8 chicken drumsticks
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- 2 tablespoons butter (for gravy)
- 2 tablespoons all-purpose flour
- 2 cups chicken broth
- 1/2 teaspoon onion powder
- 4 large russet potatoes, peeled and cut into chunks
- 1/4 cup butter (for mash)
- 1/2 cup milk (warm)
- Salt and pepper to taste (for mash)
- Fresh parsley for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C).
- Pat chicken drumsticks dry with paper towels. Rub with olive oil, salt, pepper, paprika, garlic powder, and thyme.
- Arrange drumsticks on a baking sheet lined with parchment paper or foil.
- Roast for 35–40 minutes, flipping halfway through, until golden brown and internal temperature reaches 165°F (74°C).
- While chicken roasts, prepare mashed potatoes: Boil potato chunks in salted water for 15–20 minutes until tender. Drain and mash with butter, warm milk, and salt and pepper to taste.
- For gravy: In a saucepan, melt 2 tablespoons butter over medium heat. Whisk in flour and cook for 1–2 minutes until lightly browned.
- Slowly whisk in chicken broth and onion powder, stirring constantly until thickened (about 5 minutes). Season with salt and pepper to taste.
- Remove chicken from oven and let rest 5 minutes. Serve drumsticks with mashed potatoes and pour gravy over the top.
- Garnish with chopped parsley if desired and enjoy.
