Description

Juicy chicken breasts stuffed with roasted red peppers, fresh spinach, and melted mozzarella, then baked to perfection for an elegant yet easy main dish.


Ingredients

  • 2 large boneless skinless chicken breasts (about 450 g)
  • 1 cup fresh spinach leaves (30 g)
  • 1/2 cup roasted red peppers, sliced (120 g)
  • 1 cup shredded mozzarella cheese (110 g)
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil (15 ml)
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Toothpicks, for securing


Instructions

  1. Preheat oven to 190°C (375°F).
  2. Slice each chicken breast horizontally to create a pocket.
  3. Season chicken inside and out with salt, pepper, paprika, and Italian seasoning.
  4. Stuff each chicken breast with spinach, roasted red peppers, mozzarella, and garlic.
  5. Secure openings with toothpicks.
  6. Heat olive oil in an oven-safe skillet over medium heat.
  7. Sear chicken for 3–4 minutes per side until lightly golden.
  8. Transfer skillet to the oven and bake for 18–22 minutes, until chicken is cooked through.
  9. Remove toothpicks before serving.

Notes

  • Let chicken rest 5 minutes before slicing.
  • Substitute provolone or fontina for mozzarella if desired.
  • Serve with roasted vegetables or a fresh salad.
