Description

Crispy and flavorful salmon patties made with canned or fresh salmon, breadcrumbs, and seasonings, perfect for a quick dinner or lunch.


Ingredients

  • 1 can (14.75 oz) salmon, drained and flaked (or 2 cups cooked fresh salmon)
  • 1/2 cup breadcrumbs (panko or regular)
  • 1/4 cup onion, finely chopped
  • 2 tbsp fresh parsley, chopped
  • 2 large eggs, lightly beaten
  • 1 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • 1 tsp lemon juice
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil (for frying)


Instructions

  1. In a large bowl, combine salmon, breadcrumbs, onion, parsley, eggs, mayonnaise, mustard, lemon juice, garlic powder, salt, and pepper. Mix until well combined.
  2. Shape mixture into 6–8 patties.
  3. Heat olive oil in a skillet over medium heat.
  4. Cook patties for 3–4 minutes per side, until golden brown and crispy.
  5. Remove from skillet and place on paper towels to drain excess oil.
  6. Serve warm with tartar sauce, lemon wedges, or over a salad.

Notes

  • For extra crunch, coat patties lightly in panko before frying.
  • Can be baked at 400°F (200°C) for 15–18 minutes as a healthier option.
  • Pairs well with a fresh salad or mashed potatoes.
