  • 3 cloves garlic, minced
  • 1 cup pumpkin puree
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp nutmeg
  • 1/4 tsp paprika (optional)
  • 1/2 cup pasta water (as needed)
  • Fresh parsley for garnish


Instructions

  1. Cook the pasta according to package instructions. Reserve 1/2 cup pasta water, then drain and set aside.
  2. In a large skillet, melt the butter over medium heat and sauté the garlic until fragrant.
  3. Stir in the pumpkin puree and cook for 1–2 minutes.
  4. Add the heavy cream and Parmesan, stirring until smooth and creamy.
  5. Season with salt, pepper, nutmeg, and paprika if using.
  6. Add reserved pasta water as needed to reach your desired sauce consistency.
  7. Toss in the cooked pasta until fully coated.
  8. Serve warm and garnish with parsley.
