Ingredients
- 12 oz fettuccine or pasta of choice
- 2 tbsp butter
- 3 cloves garlic, minced
- 1 cup pumpkin puree
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp nutmeg
- 1/4 tsp paprika (optional)
- 1/2 cup pasta water (as needed)
- Fresh parsley for garnish
Instructions
- Cook the pasta according to package instructions. Reserve 1/2 cup pasta water, then drain and set aside.
- In a large skillet, melt the butter over medium heat and sauté the garlic until fragrant.
- Stir in the pumpkin puree and cook for 1–2 minutes.
- Add the heavy cream and Parmesan, stirring until smooth and creamy.
- Season with salt, pepper, nutmeg, and paprika if using.
- Add reserved pasta water as needed to reach your desired sauce consistency.
- Toss in the cooked pasta until fully coated.
- Serve warm and garnish with parsley.
