Description

A savory and aromatic seafood fried rice made with shrimp, squid, and tender rice stir-fried with vegetables, eggs, and soy sauce for a quick and satisfying meal.


Ingredients

  • 3 cups cooked jasmine rice (cold)
  • 150 g shrimp, peeled and deveined
  • 150 g squid, cleaned and sliced
  • 2 eggs, lightly beaten
  • 2 tablespoons vegetable oil
  • 1 tablespoon sesame oil
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1/2 cup frozen peas and carrots
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1/2 teaspoon white pepper
  • 1/4 teaspoon salt (adjust to taste)
  • 2 green onions, sliced
  • 1 teaspoon lemon juice (optional)


Instructions

  1. Heat 1 tablespoon of vegetable oil in a large wok or skillet over high heat.
  2. Add shrimp and squid, stir-fry for 2–3 minutes until just cooked. Remove and set aside.
  3. Add remaining vegetable oil to the wok and pour in beaten eggs. Scramble quickly until just set.
  4. Add garlic and onion, stir-fry for 1 minute until fragrant.
  5. Add peas and carrots and cook for another minute.
  6. Add cooked rice, breaking up any clumps, and stir-fry for 2–3 minutes.
  7. Return seafood to the wok and mix well.
  8. Add soy sauce, oyster sauce, salt, and white pepper. Stir-fry until evenly combined.
  9. Drizzle with sesame oil and add green onions.
  10. Finish with lemon juice if desired and serve hot.

Notes

  • Use day-old rice for best texture.
  • You can substitute other seafood like scallops or crab.
  • Adjust soy sauce to control saltiness.
