Description
Crispy golden tortillas filled with juicy shrimp, melted cheese, and savory spices, making an easy and irresistible quesadilla perfect for lunch or dinner.
Ingredients
- 1 lb large shrimp, peeled and deveined
- 1 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- Salt and black pepper to taste
- 2 cups shredded Monterey Jack or Mexican blend cheese
- 4 large flour tortillas
- 1/2 cup red bell pepper, thinly sliced
- 1/4 cup red onion, thinly sliced
- 2 tbsp butter or oil for cooking
- Sour cream and salsa for serving (optional)
Instructions
- In a bowl, toss shrimp with olive oil, chili powder, cumin, smoked paprika, garlic powder, salt, and pepper.
- Heat a skillet over medium-high heat and cook shrimp for 2–3 minutes per side until pink and cooked through. Remove and set aside.
- Wipe the skillet clean and reduce heat to medium.
- Place one tortilla in the pan, sprinkle evenly with cheese.
- Top with cooked shrimp, bell pepper, onion, and more cheese.
- Cover with a second tortilla and cook until the bottom is golden and cheese begins to melt.
- Carefully flip and cook the other side until crisp and fully melted.
- Remove from pan, rest for 1 minute, then slice into wedges.
- Serve warm with sour cream and salsa if desired.
Notes
- Use corn tortillas for a gluten-free alternative.
- Add jalapeños for extra heat.
- Do not overcook shrimp to keep them tender.
