Description

Crispy golden tortillas filled with juicy shrimp, melted cheese, and savory spices, making an easy and irresistible quesadilla perfect for lunch or dinner.


Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • Salt and black pepper to taste
  • 2 cups shredded Monterey Jack or Mexican blend cheese
  • 4 large flour tortillas
  • 1/2 cup red bell pepper, thinly sliced
  • 1/4 cup red onion, thinly sliced
  • 2 tbsp butter or oil for cooking
  • Sour cream and salsa for serving (optional)


Instructions

  1. In a bowl, toss shrimp with olive oil, chili powder, cumin, smoked paprika, garlic powder, salt, and pepper.
  2. Heat a skillet over medium-high heat and cook shrimp for 2–3 minutes per side until pink and cooked through. Remove and set aside.
  3. Wipe the skillet clean and reduce heat to medium.
  4. Place one tortilla in the pan, sprinkle evenly with cheese.
  5. Top with cooked shrimp, bell pepper, onion, and more cheese.
  6. Cover with a second tortilla and cook until the bottom is golden and cheese begins to melt.
  7. Carefully flip and cook the other side until crisp and fully melted.
  8. Remove from pan, rest for 1 minute, then slice into wedges.
  9. Serve warm with sour cream and salsa if desired.

Notes

  • Use corn tortillas for a gluten-free alternative.
  • Add jalapeños for extra heat.
  • Do not overcook shrimp to keep them tender.
