Ingredients

  • 4 medium russet potatoes, washed and scrubbed
  • 3 tablespoons melted butter
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme or rosemary
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley (optional, for garnish)


Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Slice each potato thinly, about 1/8 inch thick, being careful not to cut all the way through — leave about 1/4 inch at the bottom to keep the slices connected (like Hasselback potatoes).
  3. In a small bowl, combine melted butter, olive oil, garlic, salt, pepper, paprika, and thyme.
  4. Brush the butter mixture generously over each potato, making sure to get some between the slices.
  5. Place the potatoes on the baking sheet and bake for 50–60 minutes, basting occasionally with more butter mixture until golden brown and crispy on the edges.
  6. Sprinkle with Parmesan cheese during the last 10 minutes of baking for a cheesy crust.
  7. Garnish with fresh parsley before serving.
