Ingredients
- 4 medium russet potatoes, washed and scrubbed
- 3 tablespoons melted butter
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1/2 teaspoon dried thyme or rosemary
- 1/2 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley (optional, for garnish)
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
- Slice each potato thinly, about 1/8 inch thick, being careful not to cut all the way through — leave about 1/4 inch at the bottom to keep the slices connected (like Hasselback potatoes).
- In a small bowl, combine melted butter, olive oil, garlic, salt, pepper, paprika, and thyme.
- Brush the butter mixture generously over each potato, making sure to get some between the slices.
- Place the potatoes on the baking sheet and bake for 50–60 minutes, basting occasionally with more butter mixture until golden brown and crispy on the edges.
- Sprinkle with Parmesan cheese during the last 10 minutes of baking for a cheesy crust.
- Garnish with fresh parsley before serving.
