Description

Slow Cooker Brown Sugar Balsamic Meat is a tender, savory-sweet dish made by slow-cooking beef in a rich balsamic vinegar and brown sugar sauce, resulting in juicy meat with deep, comforting flavor.


Ingredients

  • 2 lb beef chuck roast or stew meat
  • 1/2 cup brown sugar
  • 1/2 cup balsamic vinegar
  • 1 cup beef broth
  • 4 cloves garlic, minced
  • 1 small onion, sliced
  • 2 tbsp soy sauce
  • 1 tbsp olive oil
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • 1/2 tsp black pepper
  • 1 tsp salt


Instructions

  1. Heat olive oil in a skillet over medium-high heat and sear the beef on all sides until browned.
  2. Place sliced onion and garlic in the bottom of the slow cooker.
  3. Add the seared beef on top of the onions.
  4. In a bowl, whisk together brown sugar, balsamic vinegar, beef broth, soy sauce, rosemary, thyme, salt, and black pepper.
  5. Pour the sauce mixture evenly over the beef.
  6. Cover and cook on LOW for 7–8 hours or on HIGH for 4–5 hours, until the meat is very tender.
  7. Remove beef, shred or slice as desired.
  8. Optional: simmer the sauce separately to thicken before serving.
  9. Serve warm over rice, mashed potatoes, or vegetables.

Notes

  • For a thicker sauce, mix 1 tbsp cornstarch with 2 tbsp water and add during the last 30 minutes.
  • This recipe works well with pork as a substitute.
  • Leftovers store well for meal prep.
