Description

Smoky, spicy, and hearty slow cooker chipotle beef chili made with tender beef, beans, tomatoes, and bold seasonings — a perfect set-and-forget comfort food.


Ingredients

  • 2 pounds beef chuck roast, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 2 cans (15 oz each) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 2 cans (14.5 oz each) diced tomatoes
  • 2 tablespoons tomato paste
  • 2 chipotle peppers in adobo sauce, chopped
  • 1 tablespoon adobo sauce (from chipotle can)
  • 2 cups beef broth
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and black pepper, to taste
  • Fresh cilantro, chopped (for garnish)


Instructions

  1. Heat olive oil in a skillet over medium-high heat. Sear beef cubes until browned on all sides. Transfer to slow cooker.
  2. Add onion, bell pepper, and garlic to the skillet; cook until softened, about 5 minutes. Transfer to slow cooker.
  3. Stir in beans, diced tomatoes, tomato paste, chipotle peppers, adobo sauce, beef broth, and seasonings.
  4. Cover and cook on low for 7–8 hours or on high for 4–5 hours, until beef is tender.
  5. Taste and adjust seasonings as needed.
  6. Serve hot, garnished with fresh cilantro.

Notes

  • For extra heat, add an additional chipotle pepper or a pinch of cayenne pepper.
  • This chili tastes even better the next day after flavors meld.
  • Top with sour cream, shredded cheese, or avocado for extra richness.
