Description
Smoky, spicy, and hearty slow cooker chipotle beef chili made with tender beef, beans, tomatoes, and bold seasonings — a perfect set-and-forget comfort food.
Ingredients
- 2 pounds beef chuck roast, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 large onion, diced
- 1 red bell pepper, diced
- 3 cloves garlic, minced
- 2 cans (15 oz each) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 2 cans (14.5 oz each) diced tomatoes
- 2 tablespoons tomato paste
- 2 chipotle peppers in adobo sauce, chopped
- 1 tablespoon adobo sauce (from chipotle can)
- 2 cups beef broth
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- Salt and black pepper, to taste
- Fresh cilantro, chopped (for garnish)
Instructions
- Heat olive oil in a skillet over medium-high heat. Sear beef cubes until browned on all sides. Transfer to slow cooker.
- Add onion, bell pepper, and garlic to the skillet; cook until softened, about 5 minutes. Transfer to slow cooker.
- Stir in beans, diced tomatoes, tomato paste, chipotle peppers, adobo sauce, beef broth, and seasonings.
- Cover and cook on low for 7–8 hours or on high for 4–5 hours, until beef is tender.
- Taste and adjust seasonings as needed.
- Serve hot, garnished with fresh cilantro.
Notes
- For extra heat, add an additional chipotle pepper or a pinch of cayenne pepper.
- This chili tastes even better the next day after flavors meld.
- Top with sour cream, shredded cheese, or avocado for extra richness.
