Description

Tender and zesty slow cooker cilantro lime chicken, seasoned with fresh lime juice, garlic, and cilantro, perfect for tacos, burrito bowls, or salads.


Ingredients

  • 2 lbs boneless, skinless chicken breasts (or thighs)
  • 1/2 cup fresh lime juice (about 34 limes)
  • 1/4 cup chicken broth
  • 1/2 cup fresh cilantro, chopped
  • 3 cloves garlic, minced
  • 1 packet taco seasoning (or homemade)
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 jalapeño, seeded and diced (optional)


Instructions

  1. Place chicken in the bottom of the slow cooker.
  2. In a small bowl, whisk together lime juice, chicken broth, cilantro, garlic, taco seasoning, cumin, chili powder, salt, pepper, and jalapeño.
  3. Pour mixture over the chicken.
  4. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until chicken is tender.
  5. Shred chicken with two forks and stir into the sauce.
  6. Serve in tacos, burrito bowls, or over rice with extra cilantro and lime wedges.

Notes

  • For extra flavor, marinate chicken in the sauce overnight before cooking.
  • Can be frozen after cooking and used for quick meals later.
