Description
Tender and zesty slow cooker cilantro lime chicken, seasoned with fresh lime juice, garlic, and cilantro, perfect for tacos, burrito bowls, or salads.
Ingredients
- 2 lbs boneless, skinless chicken breasts (or thighs)
- 1/2 cup fresh lime juice (about 3–4 limes)
- 1/4 cup chicken broth
- 1/2 cup fresh cilantro, chopped
- 3 cloves garlic, minced
- 1 packet taco seasoning (or homemade)
- 1 tsp cumin
- 1/2 tsp chili powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 jalapeño, seeded and diced (optional)
Instructions
- Place chicken in the bottom of the slow cooker.
- In a small bowl, whisk together lime juice, chicken broth, cilantro, garlic, taco seasoning, cumin, chili powder, salt, pepper, and jalapeño.
- Pour mixture over the chicken.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until chicken is tender.
- Shred chicken with two forks and stir into the sauce.
- Serve in tacos, burrito bowls, or over rice with extra cilantro and lime wedges.
Notes
- For extra flavor, marinate chicken in the sauce overnight before cooking.
- Can be frozen after cooking and used for quick meals later.
- Pairs well with avocado, salsa, or sour cream toppings.
