Description
Juicy smash burgers with crispy edges, topped with a rich and tangy creamy baconnaise sauce, served on toasted buns for an indulgent, flavor-packed meal.
Ingredients
- 1 lb ground beef (80/20)
- 4 burger buns
- 6 strips beef bacon, cooked and chopped
- 4 slices cheddar cheese
- 1 small onion, finely diced
- 2 tbsp unsalted butter
- Salt and black pepper to taste
- 1 tbsp vegetable oil
- 4 lettuce leaves
- 1 tomato, sliced
- Pickles (optional)
- For Baconnaise Sauce:
- 1/2 cup mayonnaise
- 1 tbsp Dijon mustard
- 1 tbsp ketchup
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1 tbsp lemon juice
- Chopped cooked beef bacon (from above)
Instructions
- Cook beef bacon in a skillet until crispy. Remove, chop, and set aside. Reserve a small amount for garnish.
- In a bowl, mix mayonnaise, Dijon mustard, ketchup, garlic powder, smoked paprika, lemon juice, and chopped beef bacon to make the baconnaise sauce. Chill until ready to use.
- Divide ground beef into 4 equal loose balls (do not compact).
- Heat a cast iron skillet or griddle over high heat and add a little oil.
- Place beef balls onto the hot surface and smash them flat with a spatula. Season with salt and pepper.
- Cook for 2–3 minutes until crispy edges form, then flip. Immediately add a slice of cheddar cheese and cook another 1–2 minutes.
- Butter and toast the burger buns until golden.
- Assemble burgers: spread baconnaise sauce on the buns, add smashed patties, diced onions, lettuce, tomato, and pickles if desired.
- Top with the bun and serve immediately.
Notes
- Use high-fat ground beef (80/20) for the best smash burger crust.
- Smash only once to keep juices inside the patty.
- Very high heat is key for crispy edges.
- You can substitute beef bacon with turkey bacon if preferred.
- Add caramelized onions for extra flavor.
