Juicy smash burgers with crispy edges, topped with a rich and tangy creamy baconnaise sauce, served on toasted buns for an indulgent, flavor-packed meal.


Ingredients

  • 1 lb ground beef (80/20)
  • 4 burger buns
  • 6 strips beef bacon, cooked and chopped
  • 4 slices cheddar cheese
  • 1 small onion, finely diced
  • 2 tbsp unsalted butter
  • Salt and black pepper to taste
  • 1 tbsp vegetable oil
  • 4 lettuce leaves
  • 1 tomato, sliced
  • Pickles (optional)
  • For Baconnaise Sauce:
  • 1/2 cup mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tbsp ketchup
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tbsp lemon juice
  • Chopped cooked beef bacon (from above)


Instructions

  1. Cook beef bacon in a skillet until crispy. Remove, chop, and set aside. Reserve a small amount for garnish.
  2. In a bowl, mix mayonnaise, Dijon mustard, ketchup, garlic powder, smoked paprika, lemon juice, and chopped beef bacon to make the baconnaise sauce. Chill until ready to use.
  3. Divide ground beef into 4 equal loose balls (do not compact).
  4. Heat a cast iron skillet or griddle over high heat and add a little oil.
  5. Place beef balls onto the hot surface and smash them flat with a spatula. Season with salt and pepper.
  6. Cook for 2–3 minutes until crispy edges form, then flip. Immediately add a slice of cheddar cheese and cook another 1–2 minutes.
  7. Butter and toast the burger buns until golden.
  8. Assemble burgers: spread baconnaise sauce on the buns, add smashed patties, diced onions, lettuce, tomato, and pickles if desired.
  9. Top with the bun and serve immediately.

Notes

  • Use high-fat ground beef (80/20) for the best smash burger crust.
  • Smash only once to keep juices inside the patty.
  • Very high heat is key for crispy edges.
  • You can substitute beef bacon with turkey bacon if preferred.
  • Add caramelized onions for extra flavor.
