Ingredients
- 12 oz spaghetti
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, sliced (oil-packed, drained)
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 3 cups fresh spinach
- 1/2 tsp red pepper flakes (optional)
- 1/2 tsp black pepper
- 1 tsp salt
- 1/4 cup reserved pasta water (as needed)
Instructions
- Cook spaghetti according to package instructions until al dente. Reserve 1/4 cup pasta water, then drain.
- Heat olive oil in a large skillet over medium heat.
- Add garlic and sauté until fragrant, about 30 seconds.
- Stir in sun-dried tomatoes and cook for 1–2 minutes.
- Reduce heat to low and add heavy cream, stirring gently.
- Add Parmesan cheese, salt, black pepper, and red pepper flakes, stirring until smooth.
- Add spinach and cook until just wilted.
- Toss cooked spaghetti into the sauce, adding reserved pasta water as needed to loosen the sauce.
- Cook for 1–2 minutes until everything is well combined.
- Serve warm with extra Parmesan if desired.

- Use half-and-half for a lighter sauce.
- Sun-dried tomatoes in oil add the best flavor.
