Description

Spaghetti & Spinach with Sun-Dried Tomato Cream Sauce is a creamy, flavorful pasta dish featuring tender spinach and tangy sun-dried tomatoes in a rich Parmesan cream sauce—perfect for a comforting yet elegant meal.


Ingredients

  • 12 oz spaghetti
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, sliced (oil-packed, drained)
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 3 cups fresh spinach
  • 1/2 tsp red pepper flakes (optional)
  • 1/2 tsp black pepper
  • 1 tsp salt
  • 1/4 cup reserved pasta water (as needed)


Instructions

  1. Cook spaghetti according to package instructions until al dente. Reserve 1/4 cup pasta water, then drain.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add garlic and sauté until fragrant, about 30 seconds.
  4. Stir in sun-dried tomatoes and cook for 1–2 minutes.
  5. Reduce heat to low and add heavy cream, stirring gently.
  6. Add Parmesan cheese, salt, black pepper, and red pepper flakes, stirring until smooth.
  7. Add spinach and cook until just wilted.
  8. Toss cooked spaghetti into the sauce, adding reserved pasta water as needed to loosen the sauce.
  9. Cook for 1–2 minutes until everything is well combined.
  10. Serve warm with extra Parmesan if desired.

Notes

  • Use half-and-half for a lighter sauce.
  • Sun-dried tomatoes in oil add the best flavor.
  • Add mushrooms or artichokes for variation.
