Ingredients
- 2 boneless, skinless chicken breasts
- 1 cup buttermilk
- 1 tsp hot sauce
- 1 cup all-purpose flour
- 1/2 cup cornstarch
- 1 tsp paprika
- 1 tsp garlic powder
- 1/2 tsp cayenne pepper
- Salt and black pepper, to taste
- Vegetable oil, for frying
- 2 tbsp butter
- 2 tbsp honey
- 1 tbsp hot sauce (for glaze)
- 2 brioche buns, toasted
- 1 cup coleslaw mix
- 2 tbsp mayonnaise
- 1 tsp apple cider vinegar
- 1 fresh jalapeño, thinly sliced
- Pickles, optional
Instructions
- Pound the chicken breasts to an even thickness. In a bowl, combine buttermilk and 1 tsp hot sauce. Add chicken and marinate for at least 1 hour (or overnight for best flavor).
- In another bowl, mix flour, cornstarch, paprika, garlic powder, cayenne, salt, and pepper.
- Remove chicken from marinade and dredge in flour mixture, pressing to adhere. Let rest for 10 minutes.
- Heat oil in a deep skillet over medium-high heat (350°F / 175°C). Fry chicken for 4–5 minutes per side until golden brown and cooked through. Drain on a rack or paper towels.
- In a small saucepan, melt butter, honey, and 1 tbsp hot sauce. Brush or drizzle this spicy-sweet glaze over the fried chicken.
- In a small bowl, mix coleslaw mix with mayonnaise and apple cider vinegar. Season with salt and pepper.
- Assemble the sandwich: Spread a little mayo on the bottom bun, add slaw, place the glazed chicken on top, and finish with jalapeño slices and pickles if desired. Top with the bun and serve immediately.

- Adjust spice level by adding more or less cayenne or jalapeño.
- For an extra-crispy crust, double-dip the chicken in the buttermilk and flour mixture before frying.
