Description

A no-bake, frozen strawberry shortcake pie with layers of creamy filling, fresh strawberries, and a buttery cookie crust — the perfect summer dessert.

Ingredients

  • 24 golden sandwich cookies (like Golden Oreos), crushed
  • 1/4 cup unsalted butter, melted
  • 1 package (8 oz) cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 container (8 oz) whipped topping, thawed
  • 2 cups fresh strawberries, chopped
  • 1/4 cup strawberry jam (optional, for extra flavor)
  • Additional crushed cookies and strawberry slices, for garnish

Instructions

  1. In a bowl, combine crushed cookies and melted butter. Press mixture into the bottom of a 9-inch pie dish. Freeze for 15 minutes to set.
  2. In a large mixing bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
  3. Fold in whipped topping until light and fluffy.
  4. Spread half of the cream mixture over the crust. Top with half of the chopped strawberries.
  5. Repeat layers with remaining cream mixture and strawberries. Drizzle with strawberry jam if using.
  6. Freeze for at least 4 hours or until firm.
  7. Before serving, let sit at room temperature for 10 minutes. Garnish with extra crushed cookies and sliced strawberries.

Notes

  • For a tangier flavor, add 1 tablespoon lemon juice to the cream mixture.
  • Best served frozen but slightly softened for easier slicing.
  • You can substitute graham crackers for cookies if preferred.
