Description
A no-bake, frozen strawberry shortcake pie with layers of creamy filling, fresh strawberries, and a buttery cookie crust — the perfect summer dessert.
Ingredients
- 24 golden sandwich cookies (like Golden Oreos), crushed
- 1/4 cup unsalted butter, melted
- 1 package (8 oz) cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 container (8 oz) whipped topping, thawed
- 2 cups fresh strawberries, chopped
- 1/4 cup strawberry jam (optional, for extra flavor)
- Additional crushed cookies and strawberry slices, for garnish
Instructions
- In a bowl, combine crushed cookies and melted butter. Press mixture into the bottom of a 9-inch pie dish. Freeze for 15 minutes to set.
- In a large mixing bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
- Fold in whipped topping until light and fluffy.
- Spread half of the cream mixture over the crust. Top with half of the chopped strawberries.
- Repeat layers with remaining cream mixture and strawberries. Drizzle with strawberry jam if using.
- Freeze for at least 4 hours or until firm.
- Before serving, let sit at room temperature for 10 minutes. Garnish with extra crushed cookies and sliced strawberries.
Notes
- For a tangier flavor, add 1 tablespoon lemon juice to the cream mixture.
- Best served frozen but slightly softened for easier slicing.
- You can substitute graham crackers for cookies if preferred.
