Ingredients

  • 4 cups diced potatoes (about 45 medium potatoes)
  • 1 small onion, diced
  • 3 cups chicken broth
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 2 tbsp butter
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • Optional toppings: bacon bits, green onions, extra cheese


Instructions

  1. Add diced potatoes, onion, chicken broth, garlic powder, salt, and pepper to a pot.
  2. Bring to a boil, then reduce heat and simmer for 12–15 minutes until potatoes are tender.
  3. Use a potato masher to lightly mash some of the potatoes for a thicker consistency.
  4. Stir in butter, milk, cheddar cheese, and sour cream until melted and creamy.
