Description
A hearty burrito inspired by Taco Bell’s Beefy Melt, packed with seasoned ground beef, seasoned rice, nacho cheese sauce, and a blend of shredded cheeses, all wrapped in a warm flour tortilla.
Ingredients
- 1 lb ground beef
- 1 packet taco seasoning mix
- 2/3 cup water
- 2 cups cooked seasoned Mexican rice
- 1 cup nacho cheese sauce
- 1 1/2 cups shredded three-cheese blend (cheddar, Monterey Jack, mozzarella)
- 4 large flour tortillas (10-inch)
- 1/2 cup sour cream (optional)
- 1/2 cup diced tomatoes (optional)
- 1/4 cup sliced green onions (optional)
Instructions
- In a skillet over medium heat, cook ground beef until browned. Drain excess fat.
- Add taco seasoning and water. Stir and simmer for 5 minutes until thickened.
- Warm tortillas in a skillet or microwave until soft and pliable.
- Assemble burritos: spread a layer of seasoned rice in the center of each tortilla.
- Top with seasoned beef, a drizzle of nacho cheese sauce, and a sprinkle of shredded cheese.
- Add optional sour cream, tomatoes, and green onions if desired.
- Fold in the sides of the tortilla and roll tightly into a burrito.
- Optional: Grill burritos on a skillet for 1–2 minutes per side until lightly browned and sealed.
- Serve hot with extra nacho cheese or salsa on the side.
Notes
- For extra flavor, add jalapeños or hot sauce before rolling.
- You can substitute ground turkey or chicken for a lighter version.
- Wrap burritos in foil to keep warm and make them portable.
