Description

Taco Stuffed Sweet Potatoes are a healthy and flavorful dish featuring roasted sweet potatoes filled with seasoned taco meat, fresh toppings, and a delicious blend of spices.


Ingredients

  • 4 medium sweet potatoes
  • 300 g ground beef
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or homemade)
  • 1/2 cup tomato sauce or salsa
  • 1/2 cup canned black beans, drained and rinsed
  • 1/2 cup corn kernels
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream or yogurt
  • 1 avocado, diced
  • Fresh cilantro, chopped
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 200°C (400°F). Pierce sweet potatoes with a fork and bake for 40–50 minutes until tender.
  2. Heat olive oil in a skillet over medium heat. Cook onion until softened, then add garlic and cook for 1 minute.
  3. Add ground beef and cook until browned. Drain excess fat if needed.
  4. Stir in taco seasoning, tomato sauce or salsa, black beans, and corn. Simmer for 5–7 minutes.
  5. Slice open baked sweet potatoes and fluff the insides with a fork.
  6. Fill each sweet potato with the taco meat mixture.
  7. Top with shredded cheese, letting it melt slightly from the heat.
  8. Add sour cream or yogurt, avocado, and cilantro before serving.

Notes

  • You can substitute ground beef with ground chicken or turkey.
  • For a vegetarian option, replace meat with extra beans or lentils.
  • Add jalapeños or hot sauce for extra spice.
  • Leftovers can be stored in the refrigerator for up to 3 days.
