Description

Moist coffee-flavored cupcakes topped with a mascarpone frosting, inspired by the classic Italian tiramisu dessert.


Ingredients

  • 1 1/4 cups all-purpose flour
  • 1 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup whole milk
  • 1/4 cup brewed espresso or strong coffee
  • 2 tbsp coffee liqueur (optional)
  • 8 oz mascarpone cheese, softened
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • Cocoa powder, for dusting


Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In a large mixing bowl, cream butter and granulated sugar until light and fluffy.
  4. Beat in eggs one at a time, then add vanilla extract.
  5. Mix in half of the dry ingredients, followed by milk, then the remaining dry ingredients until just combined.
  6. Stir in the espresso or coffee.
  7. Divide batter evenly among cupcake liners and bake for 18–20 minutes or until a toothpick comes out clean. Let cool completely.
  8. For the frosting, beat mascarpone cheese with powdered sugar until smooth. In a separate bowl, whip heavy cream to stiff peaks and fold into mascarpone mixture.
  9. Brush cooled cupcakes with coffee liqueur (if using).
  10. Pipe mascarpone frosting on top of cupcakes and dust with cocoa powder.

Notes

  • You can omit the coffee liqueur for a kid-friendly version.
  • Refrigerate cupcakes until ready to serve.
  • Best enjoyed within 2 days for freshness.
