The Ultimate Beef & Noodles Comfort Bowl is a hearty, cozy classic featuring tender simmered beef, rich savory gravy, and buttery egg noodles for the perfect cold-weather comfort meal.
Ingredients
- 2 lbs beef stew meat or chuck roast, cut into chunks
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 1 bay leaf
- 12 oz egg noodles
- 3 tablespoons cornstarch
- 3 tablespoons water
- 2 tablespoons butter (optional, for richness)
- Fresh parsley for garnish
Instructions
- Season beef with salt, pepper, and garlic powder.
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Brown beef in batches and set aside.
- Add diced onion to the pot and cook 3–4 minutes until softened. Add garlic and cook 1 minute.
- Pour in beef broth, Worcestershire sauce, thyme, paprika, and bay leaf. Stir well.
- Return beef to the pot, bring to a simmer, then reduce heat to low.
- Cover and cook 1 1/2 to 2 hours, stirring occasionally, until beef is tender.
- Meanwhile, cook egg noodles according to package directions. Drain and set aside.
- Create a cornstarch slurry by mixing cornstarch and water. Add to the pot and stir until gravy thickens.
- Stir in butter for extra richness if desired.
- Serve beef and gravy over a bowl of egg noodles and garnish with fresh parsley.
Notes
- For deeper flavor, add 1/2 cup red wine when adding broth.
- Use chuck roast for the most tender results.
- Cook noodles just before serving so they stay firm.
- Refrigerated leftovers taste even better the next day.
