Description

The Ultimate Beef & Noodles Comfort Bowl is a hearty, cozy classic featuring tender simmered beef, rich savory gravy, and buttery egg noodles for the perfect cold-weather comfort meal.


Ingredients

  • 2 lbs beef stew meat or chuck roast, cut into chunks
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 bay leaf
  • 12 oz egg noodles
  • 3 tablespoons cornstarch
  • 3 tablespoons water
  • 2 tablespoons butter (optional, for richness)
  • Fresh parsley for garnish


Instructions

  1. Season beef with salt, pepper, and garlic powder.
  2. Heat olive oil in a large pot or Dutch oven over medium-high heat. Brown beef in batches and set aside.
  3. Add diced onion to the pot and cook 3–4 minutes until softened. Add garlic and cook 1 minute.
  4. Pour in beef broth, Worcestershire sauce, thyme, paprika, and bay leaf. Stir well.
  5. Return beef to the pot, bring to a simmer, then reduce heat to low.
  6. Cover and cook 1 1/2 to 2 hours, stirring occasionally, until beef is tender.
  7. Meanwhile, cook egg noodles according to package directions. Drain and set aside.
  8. Create a cornstarch slurry by mixing cornstarch and water. Add to the pot and stir until gravy thickens.
  9. Stir in butter for extra richness if desired.
  10. Serve beef and gravy over a bowl of egg noodles and garnish with fresh parsley.

Notes

  • For deeper flavor, add 1/2 cup red wine when adding broth.
  • Use chuck roast for the most tender results.
  • Cook noodles just before serving so they stay firm.
  • Refrigerated leftovers taste even better the next day.
