Description
A light and refreshing pasta dish made with creamy ricotta, fresh spinach, and zesty lemon for a perfect balance of flavor and comfort.
Ingredients
- 12 oz pasta (penne, rigatoni, or spaghetti)
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 5 cups fresh spinach
- 1 cup ricotta cheese
- 1/2 cup grated parmesan cheese
- Zest and juice of 1 lemon
- 1/2 tsp red pepper flakes (optional)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup reserved pasta water
- Fresh basil, chopped (for garnish)
Instructions
- Cook pasta according to package directions in salted boiling water until al dente. Reserve 1/4 cup of pasta water, then drain.
- In a large skillet, heat olive oil over medium heat. Add garlic and sauté for 1 minute until fragrant.
- Add spinach and cook until wilted, about 2 minutes.
- Reduce heat to low and stir in ricotta, parmesan, lemon zest, lemon juice, salt, pepper, and red pepper flakes.
- Add cooked pasta and reserved pasta water. Toss until pasta is coated in creamy sauce.
- Serve warm, garnished with fresh basil and extra parmesan if desired.
Notes
- For added protein, stir in grilled chicken or shrimp.
- Use whole wheat or chickpea pasta for a healthier option.
- Adjust lemon juice to taste depending on desired tanginess.
