Ingredients
- 1 cup Lotus Biscoff cookie butter (cookie spread)
- 8 oz cream cheese, softened

- 1 1/2 cups heavy whipping cream, cold
- 12 Lotus Biscoff cookies, crushed

- Whipped cream

Instructions
- Beat the softened cream cheese until smooth and creamy.
- Add the Biscoff cookie butter, powdered sugar, and vanilla extract. Beat until fully combined.
- In a separate bowl, whip the heavy cream to stiff peaks.
- Gently fold the whipped cream into the Biscoff mixture until light and fluffy.
- Fold in half of the crushed Biscoff cookies.
- Spoon or pipe the mousse into serving glasses or dessert cups.
- Refrigerate for at least 2 hours until chilled and set.
- Before serving, top with whipped cream, the remaining crushed Biscoff cookies, a drizzle of melted Biscoff spread, and a whole Biscoff cookie.
