Description

These Broiler Eggplant Sandwiches are a delicious summer lunch option featuring tender broiled eggplant, melted cheese, and fresh toppings layered inside toasted bread rolls.


Ingredients

  • 1 medium eggplant, sliced into 1/2-inch rounds
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning
  • 4 sandwich rolls or ciabatta buns
  • 4 slices provolone or mozzarella cheese
  • 1 large tomato, sliced
  • Fresh basil leaves
  • 2 tbsp mayonnaise or garlic aioli
  • Optional: balsamic glaze for drizzling


Instructions

  1. Preheat the broiler and line a baking tray with foil.
  2. Brush eggplant slices with olive oil on both sides and season with salt, pepper, and Italian seasoning.
  3. Place eggplant slices on the tray and broil for 4-5 minutes per side until golden and tender.
  4. Top the eggplant slices with cheese and broil for another 1 minute until melted.
  5. Toast the sandwich rolls lightly under the broiler if desired.
  6. Spread mayonnaise or garlic aioli on the rolls.
  7. Layer the eggplant, tomato slices, and basil leaves onto the rolls.
  8. Drizzle with balsamic glaze if using, then serve warm.
