These Broiler Eggplant Sandwiches are a delicious summer lunch option featuring tender broiled eggplant, melted cheese, and fresh toppings layered inside toasted bread rolls.
Ingredients
- 1 medium eggplant, sliced into 1/2-inch rounds
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp Italian seasoning
- 4 sandwich rolls or ciabatta buns
- 4 slices provolone or mozzarella cheese
- 1 large tomato, sliced
- Fresh basil leaves
- 2 tbsp mayonnaise or garlic aioli
- Optional: balsamic glaze for drizzling
Instructions
- Preheat the broiler and line a baking tray with foil.
- Brush eggplant slices with olive oil on both sides and season with salt, pepper, and Italian seasoning.
- Place eggplant slices on the tray and broil for 4-5 minutes per side until golden and tender.
- Top the eggplant slices with cheese and broil for another 1 minute until melted.
- Toast the sandwich rolls lightly under the broiler if desired.
- Spread mayonnaise or garlic aioli on the rolls.
- Layer the eggplant, tomato slices, and basil leaves onto the rolls.
- Drizzle with balsamic glaze if using, then serve warm.
Notes
- Salt the eggplant beforehand and let it sit for 15 minutes to reduce bitterness.
