Ingredients

  • 1 lb cooked lobster meat, chopped into bite-sized pieces
  • 6 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 small shallot, finely diced
  • 1 1/2 cups long-grain white rice, uncooked
  • 3 cups seafood stock or chicken broth
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh chives


Instructions

  1. Heat olive oil and butter in a large skillet or Dutch oven over medium heat.
  2. Cook the butter for 3-4 minutes, stirring frequently, until golden brown and nutty in aroma.
  3. Add shallot and cook for 2-3 minutes until softened.
  4. Stir in garlic and cook for 30 seconds until fragrant.
  5. Add rice and toast for 1-2 minutes, stirring frequently.
  6. Pour in seafood stock, lemon juice, lemon zest, salt, pepper, paprika, and thyme.
  7. Bring to a boil, then reduce heat to low.
  8. Cover and simmer for 18-20 minutes until the rice is tender and liquid is absorbed.
  9. Gently fold in the lobster meat and cook for 2-3 minutes until warmed through.
  10. Stir in Parmesan cheese until melted and creamy.
  11. Remove from heat and let stand for 5 minutes.
  12. Garnish with parsley and chives before serving.

  • Fresh lobster meat provides the best flavor, but frozen lobster can be used if thawed properly.
