Ingredients
- 1 1/2 lbs russet or Yukon Gold potatoes, peeled and thinly sliced
- 1 lb cooked lobster meat, chopped
- 2 tablespoons unsalted butter
- 3 cloves garlic, minced
- 2 tablespoons all-purpose flour
- 2 cups whole milk
- 1 cup heavy cream
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper (optional)
- 1 1/2 cups shredded sharp cheddar cheese
- 1 cup shredded Gruyère cheese
- 1/2 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
- 1 tablespoon chives, finely sliced
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- Melt butter in a saucepan over medium heat.
- Add garlic and cook for 30 seconds until fragrant.
- Whisk in flour and cook for 1 minute.
- Gradually whisk in milk and heavy cream until smooth.
- Add salt, black pepper, paprika, and cayenne pepper.
- Cook until slightly thickened, about 4-5 minutes.
- Stir in cheddar, Gruyère, and half of the Parmesan cheese until melted.
- Arrange half of the sliced potatoes in the baking dish.
- Top with half of the lobster meat and one-third of the cheese sauce.
- Repeat layers with remaining potatoes, lobster, and sauce.
- Sprinkle the remaining Parmesan cheese over the top.
- Cover with foil and bake for 45 minutes.
- Remove foil and bake an additional 20-25 minutes until golden and potatoes are tender.
- Rest for 10 minutes before serving.
- Garnish with parsley and chives.
