Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1 tablespoon chipotle peppers in adobo sauce, minced
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 small corn or flour tortillas
  • 2 cups shredded cabbage
  • 1/2 cup shredded carrots
  • 1/4 cup chopped cilantro
  • For the Chipotle Sauce:
  • 1/2 cup sour cream
  • 1 tablespoon mayonnaise
  • 1 teaspoon chipotle peppers in adobo sauce, minced
  • 1 teaspoon lime juice
  • 1/4 teaspoon salt
  • Lime wedges, for serving


Instructions

  1. In a bowl, combine olive oil, lime juice, chipotle peppers, paprika, garlic powder, cumin, salt, and black pepper.
  2. Add shrimp and toss to coat. Marinate for 15 minutes.
  3. In a separate bowl, combine cabbage, carrots, and cilantro to make the slaw.
  4. Whisk together sour cream, mayonnaise, chipotle peppers, lime juice, and salt to make the chipotle sauce.
  5. Heat a large skillet over medium-high heat.
  6. Cook shrimp for 2-3 minutes per side until pink and cooked through.
  7. Warm tortillas in a dry skillet or microwave.
  8. Fill each tortilla with slaw and shrimp.
  9. Drizzle with chipotle sauce.
  10. Serve immediately with lime wedges.
