Ingredients
- 1 lb large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- 1 tablespoon chipotle peppers in adobo sauce, minced

- 1 teaspoon garlic powder
- 1 teaspoon cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 8 small corn or flour tortillas
- 2 cups shredded cabbage
- 1/2 cup shredded carrots
- 1/4 cup chopped cilantro
- For the Chipotle Sauce:
- 1/2 cup sour cream
- 1 tablespoon mayonnaise
- 1 teaspoon chipotle peppers in adobo sauce, minced
- 1 teaspoon lime juice
- 1/4 teaspoon salt
- Lime wedges, for serving
Instructions
- In a bowl, combine olive oil, lime juice, chipotle peppers, paprika, garlic powder, cumin, salt, and black pepper.
- Add shrimp and toss to coat. Marinate for 15 minutes.
- In a separate bowl, combine cabbage, carrots, and cilantro to make the slaw.
- Whisk together sour cream, mayonnaise, chipotle peppers, lime juice, and salt to make the chipotle sauce.
- Heat a large skillet over medium-high heat.
- Cook shrimp for 2-3 minutes per side until pink and cooked through.
- Warm tortillas in a dry skillet or microwave.
- Fill each tortilla with slaw and shrimp.
- Drizzle with chipotle sauce.
- Serve immediately with lime wedges.
