Ingredients

  • 2 chicken breasts, sliced or cubed
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup mushrooms, sliced (optional)
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. Season chicken with salt, pepper, and Italian seasoning.
  2. Heat olive oil and 1 tablespoon butter in a large skillet over medium heat.
  3. Add chicken and cook for 5-6 minutes until golden and cooked through. Remove and set aside.
  4. In the same pan, melt remaining butter and sauté onion until soft.
  5. Add garlic and mushrooms (if using) and cook for 2-3 minutes.
  6. Pour in chicken broth and simmer for 2 minutes.
  7. Add heavy cream and parmesan cheese, stirring until the sauce is smooth.
  8. Return chicken to the skillet and coat with the creamy sauce.
  9. Simmer for another 3-4 minutes until slightly thickened.
  10. Garnish with parsley and serve warm.
