Ingredients

  • 1 lb boneless skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons unsalted butter
  • 3 packages (3 oz each) ramen noodles, seasoning packets discarded
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 4 oz cream cheese, softened
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup baby spinach (optional)
  • 2 green onions, sliced
  • 2 tablespoons chopped fresh parsley


Instructions

  1. Season chicken with garlic powder, onion powder, salt, and black pepper.
  2. Heat olive oil in a large skillet or Dutch oven over medium-high heat.
  3. Add chicken and cook for 5-6 minutes until golden brown and fully cooked. Remove and set aside.
  4. Reduce heat to medium and melt butter in the same pan.
  5. Add garlic and cook for 30 seconds until fragrant.
  6. Pour in chicken broth and bring to a gentle boil.
  7. Add ramen noodles and cook for 2-3 minutes, stirring occasionally.
  8. Reduce heat to low and stir in heavy cream and cream cheese until smooth.
  9. Add Parmesan cheese and stir until melted.
  10. Return chicken to the pan and mix well.
  11. Stir in spinach if using and cook until wilted.
  12. Simmer for 2-3 minutes until the sauce thickens slightly.
  13. Garnish with green onions and parsley.
  14. Serve immediately while hot and creamy.
