Ingredients
- 1 lb boneless skinless chicken breasts, cut into bite-sized pieces
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 2 tablespoons unsalted butter
- 3 packages (3 oz each) ramen noodles, seasoning packets discarded
- 3 cups chicken broth
- 1 cup heavy cream
- 4 oz cream cheese, softened
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup baby spinach (optional)
- 2 green onions, sliced
- 2 tablespoons chopped fresh parsley
Instructions
- Season chicken with garlic powder, onion powder, salt, and black pepper.
- Heat olive oil in a large skillet or Dutch oven over medium-high heat.
- Add chicken and cook for 5-6 minutes until golden brown and fully cooked. Remove and set aside.
- Reduce heat to medium and melt butter in the same pan.
- Add garlic and cook for 30 seconds until fragrant.
- Pour in chicken broth and bring to a gentle boil.
- Add ramen noodles and cook for 2-3 minutes, stirring occasionally.
- Reduce heat to low and stir in heavy cream and cream cheese until smooth.
- Add Parmesan cheese and stir until melted.
- Return chicken to the pan and mix well.
- Stir in spinach if using and cook until wilted.
- Simmer for 2-3 minutes until the sauce thickens slightly.
- Garnish with green onions and parsley.
- Serve immediately while hot and creamy.
