Ingredients

  • 1 1/2 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 1/2 cups uncooked long-grain white rice
  • 1 small onion, finely diced
  • 4 cloves garlic, minced
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 3/4 cup freshly grated Parmesan cheese
  • 1/4 cup hot honey
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon sliced green onions (optional)
  • Red pepper flakes, for garnish (optional)


Instructions

  1. Season the chicken with paprika, Italian seasoning, garlic powder, onion powder, salt, and black pepper.
  2. Heat the olive oil in a large deep skillet over medium-high heat.
  3. Sear the chicken for 5-6 minutes until lightly browned. Remove and set aside.
  4. Reduce the heat to medium and melt the butter in the same skillet.
  5. Add the onion and cook for 3-4 minutes until softened, then stir in the garlic for 30 seconds.
  6. Add the uncooked rice and stir for 1 minute to lightly toast it.
  7. Pour in the chicken broth and bring to a boil.
  8. Return the chicken to the skillet, reduce the heat to low, cover, and simmer for 18-20 minutes until the rice is tender.
  9. Stir in the heavy cream, Parmesan cheese, hot honey, and lemon juice until smooth and creamy.
  10. Cook for 2-3 minutes until the sauce thickens slightly.
  11. Garnish with parsley, green onions, and red pepper flakes if desired before serving.

  • Chicken thighs can be substituted for extra juicy meat.
