Description

Creamy Mushroom and Asparagus Chicken Penne is a comforting pasta dish made with tender chicken, earthy mushrooms, crisp asparagus, and penne pasta coated in a rich garlic parmesan cream sauce.


Ingredients

  • 300 g penne pasta
  • 2 chicken breasts, diced
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 3 garlic cloves, minced
  • 200 g mushrooms, sliced
  • 1 bunch asparagus, trimmed and cut into pieces
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp chili flakes (optional)
  • 2 tbsp fresh parsley, chopped


Instructions

  1. Cook the penne pasta according to package instructions until al dente. Drain and set aside.
  2. Season the chicken with salt, pepper, and Italian seasoning.
  3. Heat olive oil in a large skillet over medium heat and cook the chicken until golden and fully cooked. Remove and set aside.
  4. In the same skillet, melt butter and sauté garlic for about 30 seconds.
  5. Add mushrooms and cook until tender and browned.
  6. Add asparagus pieces and cook for 3-4 minutes until slightly tender but still crisp.
  7. Pour in the heavy cream and bring to a gentle simmer.
  8. Stir in parmesan cheese until the sauce becomes smooth and creamy.
  9. Return the cooked chicken to the skillet and stir well.
  10. Add the cooked penne pasta and toss until evenly coated in the sauce.
  11. Sprinkle with parsley and optional chili flakes before serving warm.

  • Do not overcook the asparagus to maintain its bright color and crunch.
