Description

A rich and comforting pasta dish featuring tender chicken, earthy mushrooms, and fresh asparagus tossed in a creamy garlic parmesan sauce.


Ingredients

  • 250 g pasta (penne or fettuccine)
  • 2 chicken breasts, sliced
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 3 garlic cloves, minced
  • 200 g mushrooms, sliced
  • 1 bunch asparagus, trimmed and cut into pieces
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp Italian seasoning
  • 1/4 tsp red chili flakes (optional)
  • 2 tbsp fresh parsley, chopped


Instructions

  1. Cook the pasta according to package instructions until al dente. Reserve 1/2 cup pasta water and drain.
  2. Season the chicken with salt, pepper, and Italian seasoning.
  3. Heat olive oil in a large skillet over medium heat and cook the chicken until golden and fully cooked. Remove and set aside.
  4. In the same skillet, melt butter and sauté garlic for 30 seconds.
  5. Add mushrooms and cook until softened and lightly browned.
  6. Add asparagus and cook for 3-4 minutes until tender-crisp.
  7. Pour in the heavy cream and bring to a gentle simmer.
  8. Stir in parmesan cheese until melted and smooth.
  9. Return the chicken to the skillet and mix well.
  10. Add the cooked pasta and toss everything together. Add reserved pasta water if needed to loosen the sauce.
  11. Garnish with parsley and chili flakes before serving warm.

Notes

  • Use freshly grated parmesan for the smoothest sauce.
  • Do not overcook the asparagus to keep it crisp and vibrant.
  • You can substitute chicken with shrimp or make it vegetarian by omitting the meat.
  • Add spinach for extra greens and flavor.
