Description
A rich and comforting pasta dish featuring tender chicken, earthy mushrooms, and fresh asparagus tossed in a creamy garlic parmesan sauce.
Ingredients
- 250 g pasta (penne or fettuccine)
- 2 chicken breasts, sliced
- 1 tbsp olive oil
- 2 tbsp butter
- 3 garlic cloves, minced
- 200 g mushrooms, sliced
- 1 bunch asparagus, trimmed and cut into pieces
- 1 cup heavy cream
- 1/2 cup grated parmesan cheese
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp Italian seasoning
- 1/4 tsp red chili flakes (optional)
- 2 tbsp fresh parsley, chopped
Instructions
- Cook the pasta according to package instructions until al dente. Reserve 1/2 cup pasta water and drain.
- Season the chicken with salt, pepper, and Italian seasoning.
- Heat olive oil in a large skillet over medium heat and cook the chicken until golden and fully cooked. Remove and set aside.
- In the same skillet, melt butter and sauté garlic for 30 seconds.
- Add mushrooms and cook until softened and lightly browned.
- Add asparagus and cook for 3-4 minutes until tender-crisp.
- Pour in the heavy cream and bring to a gentle simmer.
- Stir in parmesan cheese until melted and smooth.
- Return the chicken to the skillet and mix well.
- Add the cooked pasta and toss everything together. Add reserved pasta water if needed to loosen the sauce.
- Garnish with parsley and chili flakes before serving warm.
Notes
- Use freshly grated parmesan for the smoothest sauce.
- Do not overcook the asparagus to keep it crisp and vibrant.
- You can substitute chicken with shrimp or make it vegetarian by omitting the meat.
