Ingredients

  • 1 lb cheese ravioli (fresh or refrigerated)
  • 1 lb halal Italian-style beef or turkey sausage, casings removed
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 small onion, finely diced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/3 cup basil pesto
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon black pepper
  • 1 cup baby spinach (optional)
  • 2 tablespoons chopped fresh basil for garnish


Instructions

  1. Cook the ravioli according to the package directions until just al dente. Drain and set aside.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add the sausage and cook for 6-8 minutes, breaking it into crumbles until browned.
  4. Add the onion and cook for 3 minutes until softened.
  5. Stir in the garlic and cook for 30 seconds until fragrant.
  6. Pour in the chicken broth and scrape up any browned bits from the skillet.
  7. Stir in the heavy cream, basil pesto, Italian seasoning, and black pepper.
  8. Add the Parmesan cheese and whisk until smooth.
  9. Stir in the spinach, if using, and cook until wilted.
  10. Fold the cooked ravioli gently into the sauce until evenly coated.
  11. Sprinkle the mozzarella cheese over the top.
  12. Cover the skillet for 2-3 minutes until the mozzarella is melted.
  13. Garnish with fresh basil and serve immediately.
