Creamy Spinach Artichoke Beef Skillet is a rich and comforting one-pan meal featuring seasoned ground beef, tender spinach, artichoke hearts, and a creamy cheesy sauce inspired by classic spinach artichoke dip.


Ingredients

  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 can (14 oz) artichoke hearts, drained and chopped
  • 3 cups fresh spinach
  • 4 oz cream cheese, softened
  • 1 cup heavy cream
  • 1/2 cup sour cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley


Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess grease if needed.
  3. Add diced onion and cook for 3-4 minutes until softened.
  4. Stir in garlic and cook for 30 seconds until fragrant.
  5. Add chopped artichoke hearts and cook for 2 minutes.
  6. Stir in spinach and cook until wilted.
  7. Reduce heat to medium-low and add cream cheese, heavy cream, and sour cream.
  8. Stir until smooth and creamy.
  9. Add mozzarella cheese, Parmesan cheese, Italian seasoning, paprika, salt, and black pepper.
  10. Cook for 3-4 minutes, stirring frequently, until cheese is melted and the sauce thickens.
  11. Garnish with fresh parsley and serve warm.

  • Serve over rice, pasta, mashed potatoes, or cauliflower rice.
  • Fresh spinach can be replaced with thawed frozen spinach, well drained.
