Ingredients
- 1 lb ground beef
- 1 tablespoon olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 can (14 oz) artichoke hearts, drained and chopped
- 3 cups fresh spinach
- 4 oz cream cheese, softened
- 1 cup heavy cream
- 1/2 cup sour cream
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1/2 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons chopped fresh parsley
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess grease if needed.
- Add diced onion and cook for 3-4 minutes until softened.
- Stir in garlic and cook for 30 seconds until fragrant.
- Add chopped artichoke hearts and cook for 2 minutes.
- Stir in spinach and cook until wilted.
- Reduce heat to medium-low and add cream cheese, heavy cream, and sour cream.
- Stir until smooth and creamy.
- Add mozzarella cheese, Parmesan cheese, Italian seasoning, paprika, salt, and black pepper.
- Cook for 3-4 minutes, stirring frequently, until cheese is melted and the sauce thickens.
- Garnish with fresh parsley and serve warm.
Notes
- Serve over rice, pasta, mashed potatoes, or cauliflower rice.
- Fresh spinach can be replaced with thawed frozen spinach, well drained.
- Use freshly grated Parmesan for the best flavor.
- Add red pepper flakes for a little heat.
- Store leftovers refrigerated for up to 4 days.
